Mini Ring Cake with Egg Liqueur – small and tasty

When I was browsing the internet some time ago, I came across mini ring cakes. I really liked them because they were a great alternative to muffins. There are countless muffin and cupcake recipes, but mini ring cakes were very new to me.

So I continued to browse the Internet to find more inspiration for a new recipe. Due to a very large production of egg liqueur I had a lot left over. So one thing came to the other and so I created these mini ring cakes with egg liqueur.

The cakes are super fluffy and very juicy. In addition they are a welcome change on the coffee table.

How do I prepare the mini ring cakes with the Thermomix?

First you preheat the oven to 180°C.

Then start by stirring 125g icing sugar with 100g cooking oil for 1 minute on speed 3 in the Thermomix until creamy. Then add 1 sachet vanilla sugar and 130g egg liqueur and stir for another 30 seconds on speed 4.

Now set the Thermomix to speed 4 and gradually add the 3 eggs through the opening in the lid. Once you have added all the eggs, let the Thermomix stir for another 30 seconds on speed 4.

Then add 70g flour, 65g starch and ½ packet of baking powder. The ingredients are then folded in for 20 seconds on speed 4. Finally whip the dough foamy for 1 minute on speed 6.

The dough can now be placed in a greased mini ring cake baking tin.

Bake the Mini ring cakes for 10 to 15 minutes at 180°C. When the cakes have cooled down, you can remove them from the mould and sprinkle them with icing sugar.

Benötigte Zutaten

  • 125 g icing sugar
  • 100 g cooking oil
  • 1 sachet vanilla sugar
  • 130 g egg liqueur
  • 3 eggs
  • 70 g flour
  • 65 g starch
  • ½ pkt. baking powder

Hinweis: Die im Rezept angegebene Backzeit kann aufgrund von Temperaturungenauigkeiten bei den verschiedensten Backofenmodellen von der Backzeit, die du benötigst, etwas abweichen. Behalte das Gericht im Backofen – zumindest beim ersten Versuch – deshalb immer im Auge.

Alle Zeitangaben beziehen sich auf die Standardmengen an Zutaten. Wenn du kleinere oder größere Portionen zubereiten willst, kann es vorkommen, dass du die Zubereitungszeit dementsprechend anpassen musst.

Rezeptzusammenfassung

  • Add 70g flour, 65g starch and ½ pkt. baking powder | 20 sec. / speed 4
  • Whip the dough until foamy | 1 min. / speed 6
  • Pour the dough into a greased mini ring cake baking tin and place in the oven | 180°C / 10–15 min.
  • Then let the mini ring cakes cool down, remove from the mould and sprinkle with icing sugar
