Fluffy Chocolate Muffins – Basic Recipe
This recipe has been optimized for the Thermomix® TM31
Today we share a basic recipe for chocolate muffins. What is so special about these muffins? They are super fluffy and very chocolaty. The secret is hidden in the chocolate.
These chocolate muffins are not only an eye-catcher, they also taste good.
I prefer to use Kinder Schokolade®, because you know I just love this chocolate. Alternatively, you can also use any other chocolate.
The muffins are a great way to recycle leftovers – if there are ever any leftovers from your chocolate.
I also like to decorate my muffins with a great icing or Smarties®. This muffin recipe is simply incredibly versatile: you can mix the Smarties® into the dough, for example – or how about a few biscuits? There are no limits to your creativity.
But enough raving. Now it’s time for the implementation!
How do I prepare Chocolate Muffins with the Thermomix?
First of all, let the oven preheat to 180°C.
You start by crushing the chocolate. Add 150g chocolate to the mixing bowl and slowly turn the speed selector up to speed 8. This should take about 5 seconds, then the chocolate has the ideal size. Afterwards you decant it.
Now add 120g sugar, 2 eggs, 100g butter and 120g milk to the Thermomix and whisk for 20 seconds until foamy on speed 6. Then add 200g flour, 1 packet baking powder and 2–3 tbsp. cocoa. Mix for 20 seconds on speed 5.
Finally add the chopped chocolate and fold it in for 15 seconds on speed 4 using the spatula. The dough is then placed in a muffin tin and baked for approx. 20 minutes at 180°C.
After the chocolate muffins have cooled down, I covered them with a cocoa icing and spread Smarties® on top. Finally I painted the “cords” of the balloons with a sugar writing. And that’ s how quickly you create sweet chocolate balloon muffins.

Note: The baking time given in the recipe may vary slightly from the baking time you need due to temperature inaccuracies in different oven models. Always keep an eye on the dish in the oven – at least for the first attempt.
