On a cool Sunday there is nothing more cosy than a coffee afternoon with family or friends. This simple crumble cake is perfect for this. The best thing about this cake: You can vary it – depending on the season – with any fruit you like. In summer with cherries, in autumn with apples or whatever tastes right to you.

How do I prepare the crumble cake with the Thermomix?

Before you start with the recipe, preheat your oven to 190°C.

You start by adding all the ingredients for the crumbles (100g sugar, 200g cold butter in pieces, 300g flour and 1 egg) to the mixing bowl and mixing them for 10 seconds at speed 5.

Now put one half of the crumbles into a prepared springform pan and press them down to a cake base. Then drip off 1 glass of sour cherries and spread them on the cake base. Then spread the remaining crumbles on the cake.

Finally bake the crumble cake in the preheated oven for 45 minutes at 190°C.

I like to serve it with cream. Simply put a cup of cream with a sachet of cream stiffener into the mixing bowl, insert the butterfly and beat the cream until stiff for 40 seconds at speed 3.

But beware! Again and again I read that it is difficult to whisk cream in the Thermomix and that it quickly turns into butter. Therefore I always advise to keep visual contact and to switch off the Thermomix as soon as the cream is stiff.
