Delicious White Chocolate Muffins with Red Fruits

Muffins are simply ideal as a snack. Whether at work, during school breaks, with coffee or simply to do something good for yourself. Here I present a new alternative for you. This white chocolate muffins are quite light and not too sweet, because they are made with cream cheese and those who like white chocolate will love these muffins.

I just love this mix of white chocolate and red fruits. Especially in summer these muffins are very refreshing, but you can always eat muffins, no matter what season!

If you prefer dark muffins, you can of course replace the white chocolate with milk or dark chocolate and simply add a teaspoon of baked cocoa before adding the fruit.

How do I prepare the white chocolate muffins in the Thermomix?

We start by crushing the chocolate. Pour 150g of white chocolate into the Thermomix and let it crush for 5 seconds on speed 6, then decant it.
Then we melt the 120g butter for about 1:30 minutes at 100°C on speed 1 and then also decant it.

Now we start with the dough. Add 3 eggs, 200g sugar and 1 sachet of vanilla sugar to the mixing bowl and stir everything for 1 minute on speed 4 until foamy. Then add 200g cream cheese and stir for another 15 seconds on speed 4. Now mix in 300g flour and 1 sachet of baking powder. This will then be folded in for 15 seconds on speed 3.

Now pour the melted butter and the grated chocolate back into the dough and let it mix again for 20 seconds on speed 3.

Finally, add 150g of red fruit and carefully fold them in with the spatula, otherwise they would discolour too much.

Use the spatula to part the tough dough and fill 2/3 of the muffin tin (muffin tray or paper cups) so that they do not overflow during baking. With the amount of ingredients, 15-20 muffins should be possible.

The muffins are baked at 170°C for approx. 25-30 minutes. The time varies a bit depending on your oven. As soon as they are lightly browned, they should be good. To be on the safe side, you can take a chopstick sample from time to time.

Required Ingredients

  • 150–200 g white chocolate
  • 120 g butter
  • 3 eggs
  • 200 g sugar
  • 1 sachet vanilla sugar
  • 200 g cream cheese
  • 300 g flour
  • 1 pkt. baking powder
  • 150 g red fruits frozen

  • Part the dough with the spatula and fill your muffin tin to 2/3 with it
  • Place muffin tin in oven | approx. 25–30 min. / 170°C
  • Ready when lightly browned. For safety's sake, test with a skewer

Note: The baking time given in the recipe may vary slightly from the baking time you need due to temperature inaccuracies in different oven models. Always keep an eye on the dish in the oven – at least for the first attempt.
